Yep, you read that title right – this is my SECOND favorite salmon recipe.  My first favorite salmon recipe is a story for another day ;).  In all seriousness, this is a really delicious, super simple, and healthy way to make salmon, and so far it’s been a hit with my dinner guests!  I’ve had a good amount of people ask for the recipe, so I decided I should probably give it a post.

In recent years, I have developed a pretty intense love of sriracha sauce (I think this is thanks to my good friend Stephanie, who used to carry it in her purse!!).  When I came across this salmon recipe, I knew I had to try it.  The recipe is actually from Gwyneth Paltrow’s cook book, It’s All Good.  The book is awesome, with so many good recipes that are super simple to make, yet so healthy and delicious.

INGREDIENTS

  • Juice and zest of 1/2 lime
  • 1 tablespoon maple syrup
  • 1 1/2 teaspoons sriracha sauce
  • 1/2 teaspoon coarse sea salt
  • 1 1/4 pounds salmon fillet, skin removed
  • 2 tablespoons coarsely chopped cilantro

PREPARATION

Heat oven to 425°. In a bowl, whisk together juice, zest, syrup, sriracha and salt. Place salmon in a baking dish lined with parchment paper; pour lime-maple mixture over top. Roast salmon until cooked through and flaky, 15 minutes. Sprinkle with cilantro; serve.

I like to serve this dish with simple, healthy sides.  In the picture above, I chose organic brown rice, broiled green beans, and fresh mango.
